Workshop in detail
Step into MoyChay's tea house on Rozengracht and spend an hour learning to whisk matcha the traditional way. A tea guide walks you through the Japanese tea ceremony steps, working with a bamboo whisk called a chasen and a tea bowl called a chawan, the same tools used in ceremonial matcha preparation for centuries.
You taste your way through three different matcha grades, noticing how the color, texture and flavor shift from one to the next. Then it is your turn: you whisk your own portions of matcha by hand, working the powder into the smooth, frothy consistency ceremonial matcha calls for.
Once you have the technique down, your guide shows you how to turn matcha into a foamy matcha latte, along with a few matcha cocktail recipes you can recreate at home. You leave with the whisking technique itself, tips for making better matcha in your own kitchen, and up to an hour afterward to relax in the tea house before you go.
