Workshop in detail

Turn milk into cheese with Paula at De Kaasserie, and find out how much of the process you can actually do yourself. Paula walks you through each stage by hand: warming the milk, adding cultures and rennet, cutting the curds, and shaping your own cheese. Along the way she explains the science behind what is happening in the pot, not just the steps to follow. You taste different cheeses as you go, both for inspiration and to understand how ageing, salt, and technique change a cheese's character. Then it is your turn to make two beginner's cheeses of your own. You leave with both cheeses, plus cheesecloth and rennet to keep the process going once you are home.
